Colour and flavour from the fruit alone
The vivid hue is not added; it is the apricot's own carotenoid colour, concentrated as the fruit is sun-dried and pureed. The flavour follows the same logic — a sweetness balanced by a clean tang, with no need for acidulants or flavouring. Because the paste is 100% fruit, that brightness comes with a clean label.
A genuinely two-sided ingredient
Apricot's balance of sweet and tart is what makes it so flexible:
- Sweet applications — fruit fillings, Danish and pastry glazes, cake layers, and confectionery centres;
- Savoury applications — glazes for meat and poultry, tagine-style sauces, and dressings where a fruity acidity is wanted.
Few fruit ingredients move so easily between the two, which is why apricot paste often becomes a year-round line rather than a seasonal one.
